Cooking: Fun & Healthy Personal Pizza

I feel that one of my jobs in life is to take a food that most people would call "unhealthy" and make a healthy version!!! Here is one of the ways we make pizza at our house. What you will need:
  • Whole wheat tortillas (one per pizza)
  • a jar of pasta sauce
  • shredded cheese
  • 1/2 cup of ground veggies (carrots, spinach, broccoli, zucchini or any other vegetable you have on hand to put in your sauce)
  • Toppings for pizza that your family likes!

The first thing I do is get my sauce ready! Get out your food processor, magic bullet, or coffee bean grinder because we need about 1/2 cup of ground up veggies! For mine I used spinach and carrots. Dark greens are soooo good for us but kids normally don't eat them so I choose spinach a lot to grind up and add to my recipes. Also, spinach doesn't add any bad taste! For this you can use anything you have on hand but a tip is to try and use the stuff your children don't eat when cooked normally.

 Add the veggies to you pasta sauce. I used Whole Foods brand 365 sauce. Their organic sauce is a great price actually comparable to "normal" grocery store sauce. If you are going to a regular grocery store to get your sauce PLEASE read the ingredient label!!! Most sauce now a days add sugar or high fructose corn syrup to it, even organic sauces! We don't need this extra sugar.....save it for the dessert right? You will find some without sugar but it's like a scavenger hunt, make it fun! =) Or another idea is to just use a jar of tomato sauce!
 Spread the sauce on the tortillas. If your child will look at the sauce and say.... what is that green stuff in there? Then you might also want to sprinkle the cheese on before you invite them to add the toppings.
 It's topping time, here is what we used! Two different types of cheeses, mushrooms (my kids LOVE them), and Natural hotdogs cut up for our pepperoni!
 They had so much fun with this and here are the pizzas ready to go in the oven. 350 degrees for about 10 min. Until your cheese is melted.
 Finished product! It will be a little harder to eat because your crust isn't thick so cut into small slices for your kids so they can hold on to them.

  2. Of corse you can share my blog!! I have been trying to reach as many people possible.... mostly my craft ideas and sometimes throwing in a healthy recipe! I think of Sarah a lot when I'm posting a craft! She always loved doing those kind of things! =)
    The 4:45 thing.... I don't know what is happening to me! My new body clock is saying wake up at 4:30ish.... then I can hardly make it to the kids bed time at 8:30pm!!! I do love having at least an hour and 1/2 in the morning all to my self! All I need is a cup of coffee, a book, and the computer! =)
