Ok, I have been experimenting a lot with the Easy, Healthy, & Fast Breakfast Muffin and I came up with something SO GOOD you will never believe you should be eating it for breakfast! My whole family LOVES Carrot Cake so I made it into a healthy muffin out of this easy recipe!
Ingredients:
1/4 cup Flax Meal
1/4 cup flour (I used Oat flour in this one but it doesn't matter)
1 teaspoon coconut oil (or butter)
1 teaspoon cinnamon
1 teaspoon sweetener (try using something rather than sugar like agave or 100% maple syrup)
1/2 teaspoon baking powder
1 egg
1 Tablespoon milk (or substitute)
1 Tablespoon Raisins
1 Tablespoon grated carrots
1 Tablespoon crushed pineapple (you could also use applesauce for this step)
Mix all ingredients together in a coffee mug and cook in the microwave for two minutes!!
For a little "Icing" I mixed 2 Tablespoons of cream cheese in a small bowl and heated in the microwave for 10/15 seconds and mixed in 1 teaspoon sweetener (I used Maple Agave syrup blend).
Then pour it over the top of the muffin!!!! Easy & Tasty!

ReplyDeleteThis looks so good...but I'm trying to figure out how to make all your yummy muffins without a microwave! It seems like using the oven would use a lot of energy for one little muffin...

DeleteI guess if you were going to do it in the oven, I would make a batch and throw them in the freezer....then it would still make this a quick and healthy breakfast! Just pull one out in the morning! =) I just know so many people who say they don't have time to eat in the morning and I say you have to have at least 5 min.... you can make this muffin in less than that and eat it in the car! =) Gotta start the day off right! =) Hey, did you check out my baby mobile post? I though of you when I posted.... I wonder what cool mobile you would come up with! You are a lot better than I am in the area of sewing/knitting!!!! I can't believe how easy it was to stitch up the little tiger faces! =)
Ooh, I just saw this! That's a good idea about freezing the muffins. And I have to check out your mobile--I'm still toying with ideas for mine! Thanks!
